Spicy Italian Vegetable Soup

Enjoy this soup for a little boost to the immune system and to warm up inside and out. 6 Servings




Cookware

  • Stock Pot

  • Spoon

  • Cutting Board

  • Knife

Ingredients

  • Olive Oil

  • 1 Pound Spicy Pork Sausage

  • 2 Tablespoon Minced Garlic

  • 1/2 Yellow Onion

  • 3 Stalks Celery Chopped

  • 1 Red Bell Pepper

  • 2 Zucchinis Chopped into small pieces

  • 3 Large Carrots

  • 1 Bunch Kale

  • 8 Oz Bella Mushrooms

  • 1 Can Tomatoes (15 oz)

  • 2 Gold Potatoes

  • 1 Radicchio

  • 3 Tablespoons Organic Parsley Chopped

  • 1 Can Sweat Peas (15 oz)

  • 1 Bay Leaf

  • 2 Tablespoons Fresh Oregano

  • 32 Oz Vegetable Broth

Instructions


  1. Put stock pot on medium with 2 tablespoons of olive oil.

  2. Add 2 Tbsp Garlic, 1/2 Yellow Onion Chopped and 1 Lb of spicy pork sausage to pan.

  3. Add 3 stalks of celery, 2 Zucchinis, 1 Red Bell Pepper, and 3 large carrots chopped to pan.
