Spicy Italian Vegetable Soup | 6-8 Servings

Warm up with this immune boosting soup. Make it vegetarian by leaving out the Italian sausage.

Ingredients

  • Olive Oil

  • 1 Tablespoon Garlic

  • 1/2 Yellow Onion

  • 3 Stalks of Celery Chopped

  • 1 cup Zucchini Chopped

  • 3 Large Carrots Sliced

  • 1 Red Bell Pepper Diced

  • 1 Leek Sliced down middle and cut into 1" pieces

  • 1 Cup Sliced Mushrooms (Baby Bella preferably)

  • 1 inch ginger root peeled and grated

  • 32 oz Vegetable Broth

  • 1 15 oz can of diced tomatoes

  • 1 15 oz can of lentils drained

  • 1 15 oz can peas drained

  • 2 Tablespoons fresh oregano chopped

  • 2 Tablespoons fresh parsley chopped

  • 1 Bay Leaf

  • 1 Cup Kale Pieces

  • 1 Cup Radicchio Pieces

  • 1 pound Italian sausage cooked

  • Salt & Pepper to Taste

Instructions

Start off with stock pan over medium heat. Add olive oil and each ingredient from square #1 into pan one by one in order. Cook ingredients for 3-4 minutes.

Add ingredients in square #2 in order one by one. Cover and let simmer for 25 minutes.
